Kale powder is made from dried and crushed kale leaves. These leaves are usually picked when they are at their peak of ripeness, then air or freeze-dried until they become fragile enough to be broken and pulverized into dust. Since the water weight has been removed, the kale leaf powder is far more concentrated than fresh wavy leaves. Packing with the nutritional density of a cup of fresh kale into around a serving of four teaspoons – making it much more nutritionally dense and easier to digest than fresh kale. The same serving has more iron and calcium per calorie than beef and a cup of milk. Many people used kale powder for baking.
